A great classic among fruit eaux-de-vie
This Poire Williams eau-de-vie is obtained through the natural fermentation of fresh Williams Bon Chrétien pears, from the Swiss canton of Valais and Italy. After fermentation, they're distilled in our copper stills and the resulting distillate is then matured in stainless steel tanks for at least two years.
Created in 1997, Biercée Poire Williams eau-de-vie was quickly acknowledged by experts and enthusiasts alike. They liked its powerfulness and well-rounded character. At this point, the 'N°1' hadn't yet been added to the label.
It was in May 1998, when it received its first prize, that our Master Distillers, proud of their first trophy, decided to rename it. Biercée's Poire Williams eau-de-vie won this first award during a comparative blind taste test, organised by the Institut Meurice in Brussels. Eight professionals from the wines and spirits sector voted it 'Best Poire Williams eau-de-vie among 16 European Poire Williams eaux-de-vie'. Proud of this recognition from their peers, our Master Distillers therefore named it 'Poire Williams N°1'.
Also awarded the Gold Medal at the Monde Selection competition in 2003, and more recently, a Gold Medal with two stars at the 'Superior Taste Award 2018' blind taste test, this renowned eau-de-vie has earned its place in the best bars.
In fact, the recipe for Biercée's Poire Williams N°1 eau-de-vie hasn't changed since its creation.

And it's this passion for taste and excellence that has always stimulated and continues to stimulate the talent of Biercée's Master Distillers. Since 1946, three great Master Distillers have passed on their passion and extraordinary know-how in our distillery.
From the highly rigorous selection of fruit, flowers and herbs, to the meticulous control of their maceration or fermentation in thermo-regulated vats, the perfect mastery of the art of distillation in stills, and right up to the careful ageing of our spirits, our Master Distiller uncompromisingly follows his passion for taste and the rules of the art of traditional distillation.
It's his passion, his talent and his know-how that allow him to patiently extract and delicately concentrate the best of nature.
Among the numerous tools required to elaborate our eaux-de-vie, gins and liqueurs, the Master Distiller's nose and palate are, without a doubt, the most important. Skilfully and continuously developed over the years, they are what allow the distiller to assess the aromas and flavours when he systematically tastes every distillate arriving in the heart of our stills, and thus guarantee the consistent quality of our products.
Being a Master Distiller at the Biercée Distillery is much more than a profession, it’s a way of life.
